There are romantic tales about the genesis of Shropshire Blue; the truth is somewhat less glamorous. A Stilton-maker moved up to Inverness in Scotland in the 1970s and decided to produce a Stilton with annatto. The result has absolutely nothing to do with Shropshire. Apparently Inverness Blue was a less appealing name. Like Stilton, this is a creamy and pungent British classic.
