When there’s a chill in the air, a comforting stew or casserole is just the ticket. Warming you from the inside out, it’s tasty, simple and packed full of delicious meat and vegetables.
Add a special twist to your stew by getting creative with the accompanying dumplings. Our Shropshire Blue adds colour and flavour, the perfect addition to a hearty beef stew and for an added treat, pair the dish with a hearty red wine like a Rioja, or a punchy stout such as Guinness.
Makes eight dumplings
100g self raising flour
50g shredded beef suet
75g Shropshire Blue cheese, crumbled
50 – 75ml cold water
Salt and pepper to season
- In a bowl, combine everything except the water and mix thoroughly.
- Add the water a tablespoon at a time, stirring well – you may not need the full amount so add it gradually.
- When a dough is formed (not sticky), split the dough into eight equal sized pieces and roll into balls by hand.
- Add to the casserole dish on the top of the stew and place on the lid, cooking for 20-30 minutes until the dumplings have puffed up and crisped a little on the top.
- Serve and enjoy!
